So I want to make a cafe seat that will work for two peopl. Has it been done? How long do you think is too long for the 79 cx500?

I think it could work if you had a solid bottom to the rear of the seat. You could unwrap it cut a slight dish in the rear (so it it sort of cradled the passenger but not to deep to take away from the cafe look)and then recover it. I dont think it would look bad in my opinion.

I reshape my seats by marking out the design on the foam with a marker and then lightly hit it with a flap disc (tiger disc) til I get my desired shape. works great

Lots of modern bikes have that removable tail cowl that turns a dual seat into a single/cafe seat with a couple of moments work. i think i would follow that route , then you will have the best of both worlds.
